Why suitable for low histanmine diet

This Creamy Carrot Soup is a perfect fit for a low-histamine diet. It contains fresh ingredients such as carrots, onions, and garlic which are known to be extremely low in histamine. Moreover, it avoids using notorious histamine triggers like spinach, citrus fruits, tomatoes, avocados, beans, and various processed items.

Instructions

  • 0Heat the olive oil in a large pot over medium heat.
  • 1Add the diced onion and minced garlic, sauté until the onion becomes translucent, about 3-5 minutes.
  • 2Add the sliced carrots to the pot and continue to cook for another 5 minutes.
  • 3Stir in the vegetable broth and dried thyme, and bring to a boil.
  • 4Once boiling, reduce the heat to low. Cover the pot and let it simmer for 25-30 minutes, or until the carrots are tender.
  • 5Use an immersion blender to blend the soup until it's smooth. Season with salt and black pepper.

If possible, use homemade, fresh vegetable stock for a depth and richness of flavor. Pre-packaged broth can contain ingredients, like vinegar and tomato paste, that may cause histamine issues.

An immersion blender can make pureeing the soup much easier and quicker. But if you don't have one, you can use a regular blender. Just make sure to let the soup cool a bit before blending to avoid accidents.
