Golden Quinoa Porridge

This dish is the creation of a New Yorker whose anscestors were from Ecuador. Quinoa was an everyday staple in their home, and served as the base for many meals. Inspired by the nutritious and versatile nature of quinoa, they set out to create a breakfast dish that was both flavor-packed and low in histamine, and so the Golden Quinoa Porridge was born.

Golden Quinoa Porridge is suitable for a low histamine diet because it uses quinoa, almond milk, and almonds which are all foods known to be low in histamine. Additionally, blueberries are one of the few fruits considered low in histamine. The use of maple syrup as a sweetener is also a safer choice for those with histamine intolerance, as other sweeteners like honey can have high levels of histamine.

Instructions

  • 0Rinse the quinoa under cold water and drain.
  • 1In a medium saucepan, combine the drained quinoa and almond milk. Bring to a boil on medium heat.
  • 2Reduce heat to low, cover, and let simmer for 15 minutes until the quinoa is tender and the almond milk has been absorbed.
  • 3Stir in the maple syrup, salt, vanilla extract, and half of the chopped almonds.
  • 4Divide the cooked quinoa into bowls. Top each serving with the remaining chopped almonds and fresh blueberries.
