Histamine-free Lemon Grilled Chicken

This recipe came to be when I was diagnosed with histamine intolerance. Being a lover of grilled dishes, it hurt to lose out on so many of my favorites. So, I decided to experiment and eventually created this delicious, histamine-free grilled chicken recipe. It quickly became a staple for our family grill nights, and no one seems to miss the high-histamine dishes we used to enjoy.

This dish is perfect for a low histamine diet. It avoids all the high-histamine and histamine liberator ingredients, and uses chicken - a low histamine meat, combined with freshly squeezed lemon juice and thyme. This is a rich source of protein without the histamine concern.

Instructions

  • 0Preheat grill over medium-high heat.
  • 1Rinse chicken breasts and pat dry with paper towels.
  • 2In a small bowl, combine olive oil, fresh lemon juice, and thyme leaves.
  • 3Brush the mixture over both sides of each chicken breast.
  • 4Season each breast with salt and freshly ground black pepper to taste.
  • 5Grill the chicken for 6-7 minutes on each side, or until internal temperature reaches 165°F.
  • 6Remove from the grill and let rest for a few minutes before serving.

Tipps

Choosing Chicken

Always opt for fresh chicken. Frozen chicken often has additives and preservatives which can trigger histamine.

Using Fresh Lemon

Use freshly squeezed lemon juice as it's richer in flavor and more conducive for the low histamine diet compared to bottled ones.

Grilling the Chicken

Avoid overcooking to keep the chicken juicy and tender. It's done when it reaches 165°F internally.

Serving Suggestions

Serve this grilled chicken with a side of fresh salad with olive oil dressing, steamed carrot or sweet potato for a complete low-histamine meal.

Storing Leftovers

Leftover grilled chicken can be stored in an airtight container in the fridge for up to 3 days. Reheat in a covered skillet over medium heat until thoroughly warmed.
